How to Make Strawberry Ice Cream at Home

Strawberry is one of America’s favorite ice cream flavors. Though store bought ice cream is always tasty, making it yourself can be extra delicious, especially since the first of the year’s strawberries are just starting to hit the shelves. I don’t have an ice cream maker so whenever I have a craving for homemade ice cream I have to look for recipes that don’t require one. I’ve included both versions so that you can enjoy homemade ice cream no matter what!
Strawberry Ice Cream Using an Ice Cream Maker
This recipe uses a classic churn-style ice cream maker. Just follow the manufacturer’s instructions for use and you’ll have a perfect batch every time!

Ingredients
- 1 ½ pints fresh strawberries, leaves and stems removed
- 4 tablespoons lemon juice
- 1 ½ cups sugar
- 1 ¼ cups whole milk
- 2 ¾ cups heavy cream
- 1 ½ teaspoons pure vanilla extract
Place the strawberries, lemon juice, and ½ cup of the sugar in a small bowl and stir gently. Cover with plastic wrap, set aside, and let sit for two hours, or until the strawberries macerate and leave their juices in the bowl. Strain the strawberry juice into a small dish and reserve. Mash half of the berries with a fork and set the other half aside.
Place the rest of the sugar and whole milk in a large mixing bowl. Mix on low speed with an electric mixer until sugar is dissolved. This should take around two minutes. Don’t overbeat or else the milk will start to develop air bubbles. Using a wooden spoon, stir in the heavy cream, strawberry juice, mashed strawberries, and vanilla.
Turn the ice cream machine on. Let it churn until it thickens, about twenty minutes. Add the whole strawberries and churn an additional five minutes until incorporated. At this point, you’ll want to follow your manufacturer’s instructions because methods differ.
Strawberry Ice Cream Without an Ice Cream Maker
This recipe is adapted from Jamie Oliver’s and takes less than a minute to make!
- 2 cups frozen strawberries
- 1 cup plain yogurt of choice
- 1 tablespoon liquid honey
- 1 tablespoon vanilla extract
Place serving bowls in the freezer while you’re making the ice cream. Add frozen strawberries, yogurt, honey, and vanilla extract to a food processor and pulse until well combined. Run a serving spoon under hot water and divide ice cream between the serving bowls. Garnish with mint leaves, a cookie, or even whipped cream!
In this recipe, I personally like using low fat Greek yogurt because it gives this ice cream an extra creamy texture. Resist the urge to use fresh strawberries in this recipe. The reason why it’s so quick and easy to make is because the strawberries are already frozen. There’s no extra freezing required!
