6 Strawberry Recipes for Summer

When strawberries are in season, it means that summer is officially on its way! In some parts of the United States, strawberries are the first in-season fruit to hit the shelves. Not only that, but they’re extra sweet at this time of year! Did you know that one cup of strawberries has only around fifty calories? Here are some ways that you can enjoy this low-calorie food this summer.

Strawberry Salsa

Salsa isn’t just for tomatoes! Strawberry salsa is made the same way as tomato salsa. Simply add two cups chopped, fresh strawberries, one small chopped onion, one chopped green pepper, one teaspoon chili powder, two tablespoons chopped, fresh cilantro, and a pinch of salt to a serving bowl and mix. Refrigerate for at least an hour before serving so the flavors can develop. Use this salsa in the same way you’d use regular tomato salsa!

Strawberry Agua Fresca

Agua Fresca, which actually means “fresh water” in Spanish, is a popular summertime drink in Mexico. It can actually be made with any fruit. However, when strawberries are in season, it’s a real treat! Simply mix two cups of fresh, cleaned strawberries, one tablespoon of sugar, the juice of one lime, and one cup of water in a blender and pulse until smooth. Pour over ice into serving glasses and enjoy!

Strawberry Pizza

Did you know that you can use strawberries on pizza instead of tomato sauce? All you need to do is top the dough with fresh, sliced strawberries, mozzarella cheese, and any toppings you would like! Place in an oven that has been preheated to 350 Degrees Fahrenheit and bake until the cheese starts bubbling. You can also pulse the strawberries in a blender before adding them to create a texture that’s similar to tomato sauce.

Strawberry Margarita

A frozen strawberry margarita is a delicious summer cocktail! Simply add two cups chopped, fresh strawberries, one cup crushed ice, the juice of one lime, one half cup of tequila, one tablespoon simple syrup or agave syrup, and a splash of triple sec in a blender and pulse until smooth. Serve in a pretty cocktail glass and garnish with wedges of fresh lime or a fresh strawberry. This recipe will make about two servings.

Strawberry Lemonade

Strawberries also taste great in lemonade! Simply prepare your favorite lemonade recipe and add to a blender with a half cup of fresh strawberries. Pulse until well combined. Serve over ice and garnish with a fresh strawberry. If desired, transfer the lemonade to a pitcher and store in the refrigerator at least one hour to incorporate the flavors.

Strawberry Salad

Did you know that strawberries also make a great salad ingredient? You can add strawberries to any salad! Try tossing together a few handfuls of baby spinach or spring mix, sliced strawberries, goat cheese, and candied walnuts in a serving bowl with some balsamic vinaigrette dressing. This makes a nice addition to any summer cookout!
