Eggnog Cupcakes Recipe for the Holidays

Tis the season for eggnog! How do you like yours? Plain? In coffee? Maybe with a shot (or two!) of brandy, rum, or bourbon? Sprinkled with some nutmeg or cinnamon? It all sounds yummy to us! If you love eggnog and want to make the most of the short time it?s widely available, why not try an eggnog dessert recipe? There are plenty to choose from, but one of our favorites is eggnog cupcakes. They are delicious and make the perfect seasonal treat to bring to a party or maybe to leave out for Santa!

First, the cupcakes!

Ingredients:

  • 1 (15.25 ounce) package yellow cake mix
  • 1 1/2 cups eggnog
  • 4 eggs
  • ¼ cup butter, melted
  • 1 teaspoon nutmeg

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease 24 muffin cups or line with paper muffin liners.
  3. Stir yellow cake mix, 1 1/2 cups eggnog, eggs, 1/4 cup melted butter, and nutmeg together in a bowl until batter is smooth.
  4. Pour cupcake batter into prepared muffin cups to fill about 2/3 full.
  5. Bake in the preheated oven until golden and the tops spring back when lightly pressed, 12 to 14 minutes.
  6. Transfer cupcakes to a wire rack to cool completely.

Next, the frosting! (What good are cupcakes without frosting?)

Ingredients:

  • 1 cup eggnog
  • 2 tablespoons all-purpose flour
  • ¼ cup butter
  • ¼ cup shortening
  • 1 cup white sugar (OR 2 to 3 cups confectioners’ sugar for a sweeter frosting)

Directions:

  1. Stir 1 cup eggnog and flour together in a saucepan over medium-high heat until mixture thickens, 5 to 7 minutes.
  2. Remove from heat and cool completely.
  3. Beat butter, shortening, and sugar together in a bowl with an electric mixture until light and fluffy, 2 to 3 minutes.
  4. Slowly beat in cooled eggnog mixture and beat until desired frosting consistency is reached.
  5. Spread frosting onto cooled cupcakes.
