Fruit Salsa for Cinco de Mayo

For Cinco de Mayo this year, we had our hearts set on a salsa a little less tomato-y. So we created this sweet, tangy fruit salsa we think you’ll find a welcomed addition to this year’s fiesta!
Ingredients:
- 1 cup pineapple, minced
- 1 cup watermelon, minced
- ½ Gala apple, minced
- ¼ cup cilantro
- 1 teaspoon jalapeño pepper, minced
- 2 lime wedges
- 2 tablespoons red onion, minced
Steps:
- In a bowl, combine pineapple, watermelon, apple, pepper, and red onion. (This salsa has a tendency to become overly watery. Feel free to discard any excess liquid.)
- Mix in the cilantro.
- Squeeze the lime wedges over the mixture and mix. Garnish with cilantro and serve with tortilla chips and/or crackers.
