How to Make Strawberry Ice Pops

Now that the warm weather is here, it’s time to start making those frozen treats! Strawberries are among the first fruits to be in-season, which means that they can also be used when making your first ice pops! If you don’t have strawberries, you can follow this recipe using other kinds of berries, such as blueberries or raspberries. This same idea also works when following the variations.
Strawberry Ice Pops Recipe

Ingredients:
- 1 ½ pints strawberries
- ½ cup cold water
- ½ cup strawberry fruit juice
- ½ cup confectioners’ sugar
Directions:
Clean the strawberries thoroughly by running them under cold water. Cut away the green leafy tops and the hard inner stalks. Roughly chop the strawberries into small pieces.
Add the strawberries to a food processor or blender with the water, strawberry juice, and confectioners’ sugar. Pulse the mixture until smooth. If you’re using a blender, you may need to pulse the ingredients together in batches.
Pour the mixture into your ice pop molds according to the manufacturer’s instructions and freeze until firm. To remove the ice pop from the mold you might need to run it under cold water to loosen the mixture from the sides.
Variations:
Strawberry Yogurt Ice Pops. Follow the recipe listed above. Omit the strawberry juice and add 1 cup strawberry yogurt instead. You can also omit the confectioners’ sugar if you think it will be too sweet.
Strawberry Mint Ice Pops. Follow the recipe listed above. Omit the strawberry juice and water. Prepare 1 cup of mint tea using either 1 tablespoon of fresh mint leaves or 1 tea bag. Strain the tea and add to the food processor with the strawberries and confectioners’ sugar. Pulse until smooth and then pour into the ice pop molds.
Strawberry Rum Ice Pops. Follow the recipe listed above. Omit half of the water and add 2 shots of white rum. Follow the rest of the recipe as outlined. You can also add other types of clear liquor, such as vodka or tequila, instead.
Strawberry Banana Ice Pops. Follow the recipe listed above. Omit half of the strawberries and use 1 small banana instead. Pulse the strawberries, banana, water, strawberry juice, and confectioners’ sugar as outlined in the recipe.
Strawberry Ice Slush. Follow the recipe listed above. Spray an 8 x 8 baking dish with nonstick cooking spray and pour the pureed mixture in. Place the dish in the freezer until frozen all the way through. Twenty minutes before serving, remove the baking dish from the freezer and transfer the frozen puree to a food processor or blender. Pulse for a few seconds until the mixture becomes slushy.
