Strawberry pina colada cocktail

Piña coladas are a great summer cocktail – they can easily be made non-alcoholic and one sip transports us to a tropical beach, even if we’re just sitting in our own backyard. This fun and super easy recipe incorporates strawberries into the classic summer cocktail. If you are making the cocktail version, feel free to use any kind of rum you prefer; I happened to have pineapple-coconut rum on hand which was the perfect choice for my strawberry piña colada. Dark rum, spiced, coconut, or really any kind would work great.

You can also take this recipe and adapt it however you’d like – maybe throw in a banana, omit the cream of coconut for coconut yogurt for a smoothie, sub in your favorite summer fruit for the strawberries…the possibilities are endless. For extra cuteness, you can serve this up in a hollowed out pineapple or break out one of those cute cocktail umbrellas. I chose to garnish simply with a strawberry, but here are some other ideas:  mint sprig, pineapple chunk, or maraschino cherry.

This recipe makes enough for 2-3 drinks depending on the size of your glasses. I prefer my piña colada to be fairly icy/slushy, but adjust the amount of ice (and rum) to your taste!

Strawberry Piña Colada

Ingredients:

  • 2 cups fresh pineapple, chopped
  • 1 cup strawberries, quartered
  • ½ cup cream of coconut
  • ½ cup pineapple juice
  • 2 shots rum (optional)
  • 4 cups ice
  • Garnishes: whole strawberry, pineapple chunk, mint sprig, or maraschino cherry

 

Directions:

  1. Using a blender, combine the pineapple, strawberries, cream of coconut, pineapple juice, and rum (if using).
  2. Add ice and blend until you’re at the desired consistency – just add 2 cups to start and see if you want to use the other 2 cups or just some of it.
  3. Garnish with a strawberry like I did or choose a different one!
