Strawberry Sangria Gelées

A sophisticated take on refreshing sangria, these elegant gelées are the perfect treat on hot summer days.


  • 3 packets of Knox gelatin powder
  • 1 cup white wine (we used Pinot Grigio)
  • 1/8 cup lemon lime seltzer
  • ¼ cup white rum
  • ¼ cup simple syrup
  • Strawberries, hulled and cut into small pieces
  • Blueberries, optional


  1. In two ice cube trays, place the desired amount of strawberries and/or blueberries.
  2. In a saucepan, combine wine, seltzer, rum, and simple syrup.
  3. Over a low heat, slowly stir in the gelatin packets, stirring constantly until everything is combined (about 5 minutes).
  4. Pour the mixture into the ice cube trays and refrigerate for at least 5 hours or overnight.
  5. To get the gelées out, place the ice cube trays in a shallow pan and fill it with hot water. Run a sharp knife around the edges of the gelées and then flip the tray over to coax the treats out.
