Strawberry Sangria Gelées

A sophisticated take on refreshing sangria, these elegant gelées are the perfect treat on hot summer days.
Ingredients:
- 3 packets of Knox gelatin powder
- 1 cup white wine (we used Pinot Grigio)
- 1/8 cup lemon lime seltzer
- ¼ cup white rum
- ¼ cup simple syrup
- Strawberries, hulled and cut into small pieces
- Blueberries, optional
Steps:
- In two ice cube trays, place the desired amount of strawberries and/or blueberries.
- In a saucepan, combine wine, seltzer, rum, and simple syrup.
- Over a low heat, slowly stir in the gelatin packets, stirring constantly until everything is combined (about 5 minutes).
- Pour the mixture into the ice cube trays and refrigerate for at least 5 hours or overnight.
- To get the gelées out, place the ice cube trays in a shallow pan and fill it with hot water. Run a sharp knife around the edges of the gelées and then flip the tray over to coax the treats out.
