Easy Strawberry Shortcake Bites

Red alert! These simple strawberry shortcake bites are a delicious update to the classic American dessert. Turning them into smaller portions makes them easier to enjoy at picnics and parties.
What You Need:
- Long toothpicks
- Strawberries (about 1 strawberry for every 2 desserts)
- Cool Whip
- Store-bought shortcake cups (you will need 1 cup per skewer)
- Piping bag
Directions:
- Carefully cut the centers of the shortcake cups, so that you have small shortcake cylinders. Cut each of these in half horizontally.
- Onto each of these shortcake pieces, pipe a layer of cool whip. Be careful not to apply too much, because you don’t want it running down the sides.
- Wash and hull the strawberries, then stand them up on the flat ends, where the stem used to be. Cut these vertically about 1/8” thick.
- Place strawberry slices that are flat on both sides onto the tops of each shortbread piece, then place one strawberry-topped shortbread piece onto another.
- Secure with a toothpick, serve, and enjoy!
