As much as Thanksgiving is about the turkey, mashed potatoes, stuffing, cranberry sauce, and assortment of vegetables, its also about dessert! Thanksgiving dessert go-tos often include apple pie, pumpkin pie, and pecan pie but what if youre craving something different this year? Here are 3 very easy strawberry dessert recipes that would be perfect for Thanksgiving!
Fresh Strawberry Pie
Ingredients:
· 1 unbaked pastry shell (9 inches)
· ¾ cup sugar
· 2 tablespoons cornstarch
· 1 cup water
· 1 package (3 ounces) strawberry gelatin
· 4 cups sliced fresh strawberries
Directions:
- Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer. Cool on a wire rack.
- In a saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved. Refrigerate for 15-20 minutes or until slightly cooled.
- Meanwhile, arrange strawberries in the crust. Pour gelatin mixture over berries. Refrigerate until set.
- Top with whipped cream when served or garnish with mint if desired. Yield: 6-8 servings.

Creamy Strawberry Pie
Ingredients:
· 1 package (10 ounces) frozen sweetened sliced strawberries, thawed<
· 1 package (3 ounces) strawberry gelatin
· 2 cups vanilla ice cream
· 1 pastry shell (9 inches), baked
· Sliced fresh strawberries, optional
Directions:
- Drain strawberries into a 1-cup measuring cup and reserve juice; set berries aside. Add enough water to juice to measure 1 cup; pour into a large saucepan. Bring to a boil over medium heat.
- Remove from the heat; stir in gelatin until dissolved. Add ice cream; stir until blended.
- Refrigerate for 5-10 minutes or just until thickened.
- Fold in reserved strawberries. Pour into pastry shell. Refrigerate until firm, about 1 hour. Garnish with fresh strawberries if desired. Yield: 6 servings.

Strawberry Pie Mousse
Ingredients:
· 4 cups fresh or frozen unsweetened strawberries
· ½ cup sugar
· 1 package (1 ounce) sugar-free instant vanilla pudding mix
· 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
Directions:
- In a food processor, combine strawberries and sugar; cover and process until smooth. Strain and discard seeds.
- Return strawberry mixture to the food processor. Add pudding mix; cover and process until smooth.
- Transfer to a large bowl; fold in whipped topping. Spoon into dessert dishes. Refrigerate until serving. Yield: 8 servings.
